Mexican food - a favorite
alternative to our beloved Dominican dishes
Perhaps unsurprisingly Mexican food as most of us know it in
Europe or the US from Tex-Mex diners, or even the odd so-called
'authentic' Mexican restaurant...has little to do with the 'real
thing'.
As with other cuisines (notably Indian food in the UK, for
example) the 'pasteurised' and 'gringo friendly' menus that tend to
abound in Western versions of the Mexican kitchen feature items that
are a far remove from the true ethnic dishes.
In the UK, where more Indian restaurants may be found than
anywhere else in the world (except perhaps Indis :-D) it has been
noted that Chicken Tikka Masala is THE most popular Indian
dish...although it actually originated in Birmingham, England!
The great Chili
'CON'...
In much the same way, the supposedly seminal 'Mexican' dish,
namely Chili con Carne (sometimes mis-spelt Chilli con Carne, and
actually a derivation of the Spanish Chile con
Carne!). Chili con Carne is in fact said to be much derided
(by the Mexicans themselves) dish that actually originated in
Texas...and is indeed that state's official dish!
Mexican food is a delicious and rich cuisine that may frequently
be spicy, but rarely overbearingly so. On these pages we present
some true Mexican dishes with some advice about preparing them in
your own home. We naturally have also included our favorite 'Chili
con Carne' recipe amongst the selection, even though (as explained)
it is an imposter, purely because...well, for one we love it...and
because it is so widely popular we thought you'd miss it if we
didn't include it...(even if it is really more 'Tex' than
'Mex'!)

Ceviche: Marinated raw fish that is literally 'cooked' by
its immersion in fresh lime juice – tangy and traditional often
served as a salad dish
Chiles Rellenos: Large Chillies – stuffed with
queso (cheese) or carne (meat) and often
soused in a spicy salsa
Frijoles: Beans...which are served in various ways and are
pretty much an all round accompaniment to most Mexican dishes.
Guacamole: This famous avaocado 'dip' is often seen in the
West in its mediocre mass produced form...try this fresh, tangy,
herby version it is a winner!
Huevos: Various egg based dishes frequently served as
breakfast dishes – such as Huevos Revueltos
(scrambled) served say with tocino (bacon) or maybe
jamón (ham)...a personal favorite!
Mole dishes: No not containing moles! But a rich spicy
savory chocolate sauce, unctuous and tempting served over turkey or
chicken.
Pumpkin seed sauce (Salsa Pipian)
Tamales: A kind of pastry pocket made with cornmeal and
stuffed with meat and vegetables.
Tortilla dishes: Enchiladas; Quesadillas; Tacos.
Tostadas: Crisp, thin tortillas stuffed with meat, chilli,
guacamole and soured cream - delicious!
