Dominican Republic recipes and almost all dishes in the Dominican
Republic are characterized by the fact that fresh foods are used,
and liberal amounts are made. It’s virtually unheard of for anyone
to leave the dinner table without having more than their fill, and
most likely some food will still be left in the service bowls!
It was always traditional for those preparing a family meal to
ensure a full plate of food was made in addition the number of folks
expected to be eating – just in case! That’s just in case an
unexpected relative arrived or maybe even a passing stranger called
by to see if anything was going.

In fact it used to be perfectly acceptable for ‘weary’ travellers
to call on the nearest household, when and if it happened to be a
meal time, where they could almost always be assured that a plate of
food would be supplied to them.
My wife recounts a childhood tale, when this very thing happened.
The only problem was that her father had recently enthusiastically
embraced ‘vegetarianism’…and naturally insisted that all the family
join him in his 'latest' passion. She well remembers the day a young
traveller called by at lunchtime to be presented with a plate of
vegetables. His querulous look was met by her poor mother’s
explanation that the ‘household’ was vegetarian...he rather curtly
replied that he ‘didn’t eat meals without meat!’ and went on his way
to find a better offering!

Indeed Dominican Republic recipes are often unashamedly ‘meat
centered’. In fact it used to be considered an indication of
‘poverty’ if a main meal was not planned around a substantial meat
dish. This meant that households always tried to stretch to include
meat in their cooking as often as the budget would allow. Indeed
some years ago families would dread being caught eating a plate of
spaghetti as this was seen as a sure sign that they had come upon
hard times!
Dominican’s generally have healthy appetites, so this is another
thing for the cook to bear in mind when trying to judge the correct
amount to prepare. It was also the case that, particularly in rural
households, any guests who may be unfamiliar with the Dominican food
culture, would be almost ‘force fed’ to the point of bursting to
ensure that they have had as much as they want before they are
allowed to vacate the dining table!
