dude, i watched your video again, and again this looks like a great dish, but not cooked the traditional way. you really lost me with the bacon at the end. if you want the traditional recipe let me know. with all due respect.

start off with about a 6 pound shoulder skin on make several 1 inch incisions all the way to the bone and loosen the skin then stuff the incisions with a mixture of chopped cilantro minced garlic minced green pepper and onion salt and pepper to taste and rub with about 2 packets of sazon seasoning packets put in a bowl and cover with orange juice marinate overnight drain orange juice sprinkle with adobo roast skinup uncovered at 300 degrees till done then pig out
Traditional or not, bacon improves anything!
Garlic Powder?? A Cuban would never use garlic powder nor paprika in the traditional recipe
I know some..they use it….
I think whole garlic is better…but not in a rub!

I like your version, how ever, I would have used garlic paste instead of garlic powder, and marinate the meat for at least three hours before cooking. Overall, very nice job.

im srry but this is not cuban at all… black beans? most pork is served with congri, some platanos, and some yucca and u got a real cuban dish…and if u do serve black beans and rice u put the black beans on top of the rice mix it in with the black bean sauce… grab urself a beer go to the tv and watch football…
hi keith, I’m a cuban chef i own a restaurant and let me tell u; it’s good that u said it’s your version because that is not how to make a cuban pork roast u do not put paprika never ever u may know cubans that they do but ones again thats their version.. as far garlic i always use real garlic that a cuban way the other that they dont use real garlic thats a lazy cuban version
oh and you use more naranja agria & u marinate the pork 24hr its better & i use leg not shoulder just an fyi

Not Cuban I agree with the other Cubans who commented, I grew up on Cuban food and learned from my grandmother and other Cubans we dont use a dry rub Cuban inspired however yes which is just fine.
You can check out my Cuban style ribs at my blog or ther Cuban dishes to get an idea, the way I marinaded the ribs is the same for the pork roast. Read it it will help you.

cubans usually cook it in the oven or outside at partys.honestly we add WAY more then those ingridents.trust me!
