I’ve heard Anthony Bourdain proclaim that in his travels around the world he has found whole roasted pig to be the best in the Philippines, second best in Bali, and third best in Puerto Rico. Cuban lechon is very similar to Puerto Rican lechon; must be a Caribbean thing. This pork tastes as good as it looks toward the end.
